Baked Peppers with Cheese

Ingredients:

  • 4 large bell peppers (any color)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend works well)
  • ½ cup cream cheese, softened
  • 1 clove garlic, minced
  • ½ teaspoon dried oregano or Italian seasoning
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley or basil (optional, for garnish)
  • Salt and pepper to taste

Instructions:

Step 1: Prepare the peppers

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. If needed, trim the bottom of the peppers slightly so they stand upright.

Step 2: Make the cheese filling

  1. In a medium bowl, combine the shredded cheese, cream cheese, minced garlic, dried oregano, salt, and pepper. Mix until well combined.

Step 3: Stuff the peppers

  1. Spoon the cheese mixture into each pepper, packing it in firmly.
  2. Place the stuffed peppers upright in a baking dish. If they don’t stand up well, you can cut a small slice off the bottom to help them stay upright.

Step 4: Bake

  1. Sprinkle the grated Parmesan cheese over the top of the stuffed peppers.
  2. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is bubbly and golden brown.

Step 5: Garnish and serve

  1. Remove from the oven and let cool for a few minutes.
  2. Garnish with fresh parsley or basil if desired.

These baked peppers with cheese are flavorful and comforting. They pair well with a simple salad or can be enjoyed on their own. Enjoy!
